High acyl gellan gum is light yellow powder and often used in non-transparent drinks or food: dairy products, coarse food grain drinks, vegetable protein drinks, fresh fruit juice or vegetable juice drinks, health drinks, meat products, etc. It can also be mixed with CMC, guar gum, microcrystalline cellulose, pectin, carrageenan and other colloid to broaden its application range.
